Second Recipe

Spaghetti in Tomato Squash

Utensils

1. Pot

2. Large frying pan or Wok

3. Wooden spatula (if you care for the pan)

4. Tongs/ Chopsticks


Ingredients

1. Extra Virgin Olive Oil or any cooking oil

2. Pitted Black Olives (optional)

3. 2 Fresh Tomatoes

4. Oregano Seasoning

5. Parmesan Cheese

6. 2 cloves of Garlic

7. 1-2 Onions

8. Spaghetti

9. Salt

10. Black Pepper

Cooking Directions

Peel off the garlic skin and the onion skin and chop off the top and bottom of the onion.

Finely chop the garlic and onion.

 

Place the tomatoes in the pot of boiling water for 5 minutes. This is to get rid of the skin easier.

Heat up the pan with extra virgin olive oil.

When the pan is heated, throw in all the chopped garlic and stir. As the garlic turns golden brown, toss in the chopped onions and continue stirring.

 

The tomato skin will shrink. The skin can now be removed easily. Bring the tomatoes to the pan and squeeze them in you hands or you could just cut and squash in on the chopping board then dump it in the pan. Just remeber to remove the core.

Add 1 tsp of salt in to the pot of water. Let it boil then add in the spaghetti.

The spaghetti should be done in 10 minutes. Take one strand to test if unsure. Remove from the pot using tongs or chopsticks.

You could add in olives if you want. Add 1 tbsp of tomato sauce and a dash of oregano sesoning in to the pan and stir and keep on squashing the chunky tomatoes. Place sauce on top of spaghetti top the sauce with as much parmesan cheese you like and food is served.


By the way, this sauce is not Neapolitan ragù ( The common red spaghetti sauce )
